I created these little power-filled bites for Vig’s volleyball team. They needed something they could eat quickly between games that would give them an energy boost without giving them a sugar crash later. They became our “secret weapon.” They taste very much like a healthy version of a Payday candy bar.
Mix the first 6 ingredients. Add the rice krispies and stir gently. Press mixture into a non-stick 9 x 13 pan. Sprinkle with finely chopped peanuts and press into the mixture with a spatula. Chill.
Cut into 2 x 2s. Makes 54 little bites at 52 calories apiece.
